Help with Lunch Ideas

Hey everyone. I am new to the diet and the boards. I need some ideas for lunch. Breakfast and dinner are easy. Unfortunately, chicken is not a "Safe" food for me. So I am a vegetarian but I do eat some fish. I have been eating rice bowls (veggies and white rice) but am getting tired of the same thing everyday. It also needs to be quick and easy. I do not like to spend half my lunch making it. Any and all ideas would be much appreciated! Thanks!

I like some of the appetizers from EFI: Guacamole, White Bean and Almond, Eggplant Hummus. There's also an Artichoke Hummus on the Recipe Board that's great.

For lunch, I'll usually have --
**Thai Kitchen Thai Ginger Noodles w/ frozen vegetables mixed in
**Black bean dip (from Eating for IBS) w/ rice and Tostitos
**peanut butter sandwich (I'm stable and can tolerate a small amount of PB on thick sliced French bread, but not everyone can, so be careful) w/ steamed and mashed baby carrots or another vegetable prepared safely, and chips
**Safe macaroni salad w/ veggie burger or hot dog
**Usually, I'll just enjoy a second breakfast
When I first finished BTC, I regularly ate Low-Fat Cranberry Pumpkin Bread with a banana or soy yogurt.

It is time consuming when you are first learning but I can whip a batch up in no time now. You can even buy soy sauce and wasabi that is transportable....if you like sushi of course.

These links are awesome Maria, thank you. (I didn't even post the original question!) I'm a vegetarian too and usually bring my lunch to work. Pasta is a wonderful thing. There's all kinds of pasta recipes out there you can whip up. I'll cook up a batch a few nights before and eat that for a few days. Some other options:
Baked potato with salsa and beans. French bread with lowfat pesto and tomatoes (and mozzerella cheese if you can swing it). Sandwiches with fake meat. (You get your soluble fiber from the bread and can sneak in some spinach or other healthy veggies.) Soy cheese (galaxy swiss slices) in quesadillas dipped in salsa. (you can sneak in some broccoli and carrots sometimes) veggie burgers with a pineapple slice on top.

i second the sandwiches with fake meat - they take some getting used to, but they're not terrible. just oddly slimy when you take them out of the package. even better than fake cold cuts are morningstar chik patties - cook it at home, then make a sandwich of it, it still tastes great cold. you can also cut them up and mix into pasta. and then there's always the microwaved sweet potato, mashed. mmm.
