Do not like/eat seafood, what else then?

I noticed in the Eating for IBS book and searching the boards online that alot of the main meals and such are based on seafood choices. I cannot stand to even look at much less eat seafood. I don't mind getting rid of the red meat, but what else do I eat for meals? I cannot just eat french bread for every meal. Plus, isn't all that bread too much starch and carbs? I am really concerned about meeting nutritional needs on this plan. Please help!!

For some of the seafood recipes you can substitute chicken or so they tell me - I'm the type of cook for whom substitutions are a major undertaking. There are recipes that use ground turkey (e.g., spaghetti sauce, Sloppy Joes, meatloaf, "hamburgers"). There are vegetarian recipes, either with just "normal" veggies or using TVP. You can make egg salad with just whites.

I cannot just eat french bread for every meal. There are worse things in life, like IBS attacks, but it really isn't necessary. Meals and snacks should be based on soluble fiber foods, but there's more to them than French bread - I've gotten heavily into potatoes (white and sweet) since being on this diet. Also, you really MUST eat fats, Insoluble Fiber foods (fruits, veggies), and safe proteins for health - just eat them carefully.

Plus, isn't all that bread too much starch and carbs? One of the sticky posts at the top of this Board is called "All about Atkins, High Carb vs. Low Carb Diets, etc.". Check it out for just these type of concerns.

I am really concerned about meeting nutritional needs on this plan. Soluble Fiber comes in a wide variety and carefully adding in fat, Insoluble Fiber fruits and veggies, whole grains as tolerated, and safe protein should make you healthy as a horse.

Most of my meals revolve around boneless, skinless chicken breasts. With summer being here, I'm practically living off of grilled chicken...good thing I like it!! One other thing I discovered is REALLY good is grilled turkey breast cutlets. Walmart sells them right by the chicken. I grill them with some worcestershire sauce & garlic salt, and it's actually ALOT like steak! Same texture & similar flavor. Really good! I make my spaghetti with boneless chicken breasts too...I just put my chicken in the crockpot with the spaghetti sauce & let it cook all day. You can make it work. There are some days when the last thing I feel like is more chicken, but I usually find something to satisfy.
