sorry i forgot to add that breads can be used in a lot of ways in vegan diets. you can make crutons for salads, crackers for spreads, experiment with dinner rolls, make kolaches, bagels, english muffins, i found these amazing cereal bars by envirokids made with crispy brown rice (they have berry, chocolate and peanut butter flavor..berry is addicting), i've found teriyaki flavored rice crackers, fruity booty, tings (cheeto tasting chip that's vegan) and TONS of other yummy fiber filled foods at places like whole foods and other health food markets. try other cereals, too. i make rice crispie treats using marshmallow creme (not sure if it's vegan) instead of gelatin. you should be able to find vegan marshmallow creme though. also there are a ton of chips out there which i use with salsas.

the cream cheese (all vegan) spreads by tofutti are to die for. i smear them on everything from veggies, to small pieces of bread. garlic and onion are my favorites.

don't forget potatoes as a good fiber source. they even make potato pasta called gnocci (spelling might be wrong). as a potato and bread addict, i've found many ways to get creative in the kitchen. i'm so glad my 2 favortie foods are staples of the ibs diet

sorry i forgot to add that. just go into the largets health food store and ask..they should be able to help. i am unable to take fiber supplements (they don't agree with me), but i do get plenty of fiber. i also use wheat gluten and can make fake chicken and dumplings (though they can get high in fat).

try going to www.pangeaveg.com and http://www.differentdaisy.com/ both places specialize in vegan products also check the peta mall at http://www.peta.org/mall/veg.html for more good food. http://www.healthy-eating.com/index.html is another place i shop a lot. try the vegan jello by emes. i love that stuff. use a smaller amount of water than the directions say, and it turns out perfect. let me know if i can be of further assistance.

They sell cookbooks too. I saw it in one of PETA's magazines I got at a thrift store. They probably have alot of soluble fiber meals in them. I'd buy them but can't afford them yet.

Hi; my only concern about eating other breads like spelt, etc. is if they are as filling as french or sourdough bread is.
