Does anyone know if a good butter substitute that tastes like butter for recipes? (I'm talking about butter in recipes, not spraying the cooking pans.) I don't know if "I can't believe it's not butter" is okay for IBS.

I use Smart Balance Light. Not only is it easier to find than the soy products (and still dairy free) but it's also lower in fat. It says not to bake with it (because it has less fat it won't give the same texture) -- but I have as long as the recipe does not call for a whole bunch of butter. For example - I used it to make a cinnamon roll bread -- where the butter was just to spread between with the cinnamon topping. It worked fine. My whole family uses it for bread and as a topping.

Smart Balance Light has worked pretty well for me, for what little baking I've used it for.
Please be aware that you can't just replace margarine for butter in equal measures, especially if you're using one of the full-fat soy margarines that was also recommended (like Willow Run, which is really good!). The fat content of the recipe will still be too high to be safe for IBS'ers. If you have any doubts about a recipe, feel free to post it here or on the recipe board, and one of us will be more than happy to show you how substitutions are made, so you'll know how to do it in the future.
