This post isn't for anyone in particular. I'm just having a really good day and it feels great to type in something that has nothing to do with a problem. I just made the antidepressent brownies for the first time! Yummy! I can't beleive they're safe! (of course, chocohaulic that I am I did melt a few non dairy chocolate chips to spread over the top. But the brownie did not make me sick so I guess it was ok. Spreading my joy! Chany

And yay for ADBs! I haven't actually tried them yet, but I make a half-batch of the peppermint fudge cake and put vegan carob chips in it... heaven! Thank goodness we can have cocoa, right? Hooray for safe chocolate fixes!

I don't know why I haven't tried them yet! I think I'm due for a little baking tonight... I bet my boyfriend will love them too.
As for the peppermint fudge cake... was the batter dry too, or just the finished product? I've found that I have to add water to the batter, because it's too dry, and the cake itself comes out very moist and tasty.

By the way, I know this is not the recipe exchange but If you're in the mood for baking... and this recipe looks safe for you (it works for me) you must try these choclate chip cookies! The recipe makes about a dozen.
1/4 c. canola oil 1/4 c. apple sauce 2 egg whites or 1/4 c. egg beater dash salt 1/4 c. confectioner's sugar 1/4 c. brown sugar 1/4 c. granulated sugar 3/4 tsp. vanilla 1 1/4 c. flour 1/2 tsp. baking powder 1/2 c. non dairy chocolate chips
1. preheat oven to 375* 2. grease a cookie sheet with non stick spray 3. Mix in a bowl 4. Roll into 1" balls Place 2" apart on cookie sheet 5. Bake 8 – 10 minutes

I made it into cupcakes instead and made up a dairy-free "orange" icing for the tops! (It was Halloween!) Talk about heavenly!!! Ohhhhh, they were yummy!

Thanks, Chany! Those look like they'll work just fine for me! I'll have to use carob chips - that's what I have on hand - but I'm sure they'll be just as tasty. Yum!
I believe it was 1/2 cup water to the whole recipe. (I usually halve it, and add 1/4 cup, so...)

sounds heavenly- I've made it into layers, put te "Fat free fudge" someone posted here between the layers and fondant over the top with roya icing and fondant decorations and had a yummy low fat, dairy free dessert for all.. looked just like some of the other fancy cakes I'e made over the years.... and I could eat it too!

The full-size recipe calls for a bundt cake pan. I would recommend that. It's been a while since I made it last, but I believe I baked my half-size recipe in an 8" square pan. If you do that, definitely DO NOT bake it for the full time recommended in the recipe... it will come out dry as bricks. I'd start checking it at half the baking time, and if it's not done yet, every 5 minutes thereafter. Once you have the time right for your oven and pan, mark it down on the recipe, so you'll know for next time.

Chany, it turns out I didn't have all the ingredients for the chocolate chip cookies after all, so I made the ADB's instead. Why did I wait so long to try these?! Oh my, they are SO GOOD. Now I just have to resist the urge to eat the entire panful.

Casey, I had to hide my pan full in the back of my freezer to keep from eating them all at once! My kids even like them! (my husband won't try them. He's afraid to try anything that has anything to do with a diet... His loss... more for me! Chany By the way, where is every body getting all that great clip art?

I tried these brownies the first week that I started changing my eating. It happened to coincide with that time of the month so the chocolate fix was perfect. I am definatley going to try the cookies. They sound wonderful!! Can you find the non-dairy chips or carob chips in regular grocery stores?

Most bittewsweet chocolate chips are non dairy. Look for the word "Parev" on the package, it means no dairy ingrediants at all.
