To answer both your questions:
Vanilla is an extract which is used to flavor cakes and cookies. You can purchase it at any supermarket. You'll find it near the spice section. It comes in a little bottle in liquid form. You can buy it in the UK also - actually you can buy it anywhere in the world.

You may be a bit confused here.. the recipe reads 1/3 cup each of oil and applesauce. This means 1/3 cup of oil and 1/3 cup of applesauce. Use Canola oil and organic applesauce (both available at supermarkets).

Hope this helps you!
P.S. I've made these, and they are absolutely delicious!

Canola oil. That too will be in the cooking aisle. With the sugar and flour, spices....etc! Also try to use unsweetened applesauce. Better for you......(NO High Fructose Corn Syrup!)

Hi

Canola oil is hard to find in the UK. You can use vegetable oil instead. These brownies are really good - you could also put in 1tsp of peppermint extract (found with the flours, dried fruits, cake making stuff in the supermarket) if you want.

Have fun!

I used sunflower oil which is what people on the boards recommended to me and it worked great.

For measurements you can get measuring cup sets I got one in Debenhams at the weekend for a fiver.

The vanilla I used was vanilla essence, its with the sugars and icing in the supermarket, in a tiny little bottle (25ml)

By the way I used a swiss roll tin and it worked just fine, the US tin sizes are lot different than ours too.

This recipe is really yummy, hope you enjoy it.
