Chablis Chicken
Another traditional recipe from my grandmother, this chicken didn't need a single modification for the IBS kitchen. It's perfectly safe and utterly delicious just the way it is. Don't skimp on the rice for serving, that is your safe soluble fiber meal foundation.
Makes 6 Servings
3 whole organic chicken breasts, skinless & boneless
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons canola oil
1 cup Chablis wine
1/2 cup apple jelly
1/2 cup currants, diced
cooked rice for serving
Sprinkle chicken with salt and pepper and set aside. In a large non-stick skillet heat oil over medium heat and cook chicken until golden brown, about four minutes per side. Remove chicken from skillet.
Add to skillet Chablis, apple jelly, and currants, and simmer, stirring constantly, until bubbly and smooth.
Return chicken to skillet and baste with sauce. Cover pan and simmer 20-30 minutes or until chicken is just cooked through. Serve with rice.
