Nova Scotia Maple Chicken (Makes 4-6 servings)
Those Canadians sure know their chicken. This is sweet and delicious!
Ingredients: 2 1/2 lbs boneless, skinless chicken breasts 1/2 cup maple syrup 1/2 teaspoon grated fresh lemon rind 1/4 cup chopped almonds 1 pinch pepper 2 teaspoons lemon juice
1. Preheat oven to 400 F (200 C). 2. Place chicken in a shallow 9 x 13 (3 litre) pan. 3. Mix remaining ingredients and pour over chicken. 4. Bake in 400 F (200 C) oven, uncovered, for about 40 minutes or until chicken is done, basting occasionally.
Note: I only used 3 chicken breasts and baked it in an 8x8-inch pan. I used the same amount of sauce ingredients and it was just perfect. So if you use the full 2 1/2 pounds of chicken, I would recommend doubling everything else!
