this is really nice I got it from channel four's show 'come dine with me' I miss out the mango chutney and masala LENTIL PÂTÉ Ingredients
1 tbsp vegetable oil- Don't use nearly as much as this it's just to saute the onion and garlic 1 onion, chopped 2 garlic cloves ground pepper 1 tsp garam masala ˝ tsp ground coriander 1˝ pints of vegetable stock 180g red lentils 1 egg - missed this out or you could just use egg white 2 tbsp milk - I used rice milk 2 tbsp mango chutney 2 tbsp chopped parsley fresh parsley to garnish pitta breads to serve Method
Preheat oven to 200°c, Gas Mark 6.
Heat oil in a saucepan and sautee the onion and garlic for 2-3 minutes, stirring. Add spices, then stir in dry lentils and add stock. Cook lentils until soft (about 20 minutes).
Drain the lentils, put mixture into food processor, add egg, milk, chutney, parsley, and blend until smooth.
Grease and line a loaf tin, spoon in mixture, cover and heat for 45 minutes until firm at 200°c, Gas Mark 6.
Once cooked, let it cool for 20 minutes then turn out and chill. Warm the pitta bread and serve the pâté with mango chutney and yoghurt with cucumber on the side.
