I just made this (see pic below), substituting soy cream cheese, soy milk, and "Egg Beaters." Note that the cake is only comparable to one layer, not a full-size bundt cake, and one serving is one-twelfth of the cake. Nevertheless, it smelled incredible throughout the house, and I'm anxious to dive into it! When I make it next time, I'm going to eliminate the cream cheese frosting; I don't think it's needed at all.

I used "Tofutti Better Than Cream Cheese." It contains no dairy, no cholesterol, no lactose, no butterfat, and is only 80 calories per 1 oz. serving.
Like I said, I don't think the cake needs it. I licked the bowl and beaters, and I'm here to tell ya, YUMMM-OH!

and the icing tasted like real cream cheese icing?
i just ask because, though i love tofu cream cheese, i don't think it tastes exactly like the dairy stuff - more like a halfway point between cream cheese and butter.

I did not like the icing. But I've never been a fan of cream cheese anyway, so I'm not a very good judge.
Actually, I didn't care much for the cake at all. I'm used to real gooey carrot cake, and this one tasted too damn healthy! If you're really craving carrot cake, go for it -- but I recommend leaving out the cornmeal and the icing.
