Okay, I can't take credit for this, but I can tell you that the entire family LOVED these (including 2 1/2 year old Liam)! They are ridiculously easy and I served them with McCain low fat fries and cooked veggies. An easy meal in less than 30 minutes! Taken from April 2004 Issue of Chatelaine Magazine (www.chatelaine.com) 1/4 cup sweet green pickle relish 1/4 cup regular mustard 1/2 cup fine dry bread crumbs 3 skinless boneless chicken breasts. 1. Preheat oven to 425 F. Spray a cooking sheet with pam. In a large bowl, combine relish and mustard. Place bread crumbs in a pie plate. Cut each chicken breast into 5 or 6 nuggets (I did 7 or 8). Add to relish mixture and stir to evenly coat. Coat chicken in bread crumbs one piece at a time. Shake off excess crumbs, then place on pan. Leave space between pieces. 2. Bake until chicken is light golden, 20 to 25 min. Terrific with ketchup or plum sauce for dipping. Serves 4: 2.9 grams fat per serving, 187 calories per serving.
